If In Doubt, Eat Hash

As we come to the end of week 1 of veganism, it's probably a good time to reflect on what I've ate for the last 7 days. There's been some hits, and some definite misses. Among the masses of dried fruit and nuts I've consumed, here's the my top 7 meals of the last 7 days:

7. Crispy Tofu Stir Fry

This struggled to even make it on to the list in all honesty. As a tofu virgin, my hopes were high. Hours and hours of effort into trying to make this tofu taste good: marinading, coating, frying - all for what? Some questionably squidgy cubes of what I can only compare to the texture of scrambled eggs. The only salvation for this dish was the 10/10 sauce rice and veggies which dampened the disappointment of tofu.

6. Vegan Cheese and Tomato Sandwich


As a quick lunch, it did the job. Little effort and time required. If you shut your eyes and pretended it was real cheese, you could almost be fooled. Downside: the cheese stinks out your fridge.  2/10




5. Kale Crisps
These were a staple even before the whole vegan thing: have definitely mastered this (incredibly simple) recipe: would definitely recommend.

4. Vegan Mac and Cheese

I was sceptical too. But it tasted legit, and was pretty easy. However, recipe did not state that this would make enough cheese sauce for 50 portions. If anyone can suggest another use for this, it would be appreciated.



3. Lentil Soup

Easy to make in bulk, chuck it in the freezer, easy lunch to keep on hand and fills you up. 10/10 recommend.

2. Sweet Potato and Chickpea Burgers

A definite win: add some stinky vegan cheese, some lettuce and some sauce and you're laughing.

1. McDonald's Hash Browns

One of the joys of the week: realising McDonalds hash browns are vegan. Excellent hangover cure.
